Sauté

Sauté (from the French sauter: to leap) holds a special place for me in cooking. I can think of no more aggressively connected act of cooking than sauté: making the food leap from the pan. Only exquisite knifework better exemplifies culinary skill, but of course, knifework is prep.

About Me

My photo
Prince Valiant
Nearly thirty years ago, I worked in a fine restaurant in Denver for not quite a year. Since then, I have never wanted to work in another. I am glad for the experience, but I have no desire to reproduce it. Cooking at home is fun--a combination of amateur chemistry, amateur sculpture, and a chance to play with knives and fire. A few years back, I married an Italian sex goddess--my darling Princess V. Life is good.
